Tortilla Soup

 

Did you know? I am the soup whisperer. Yes, blending and layering flavors into one homogenous and delectable entity is my speciality. Unintentionally, but delightfully so. Some of you had the pleasure of trying my mushroom tortilla soup with Rancho Gordo hominy and beans, and Wiser Family Farms radish and edible flowers at some of the many workshops I’ve hosted. And I’ve gotten a lot of requests for the recipes. Well here it is! The thing about soup, is that many ingredients can be swapped out for what you have on hand. It’s all about building a strong flavor profile and layering those flavors to build a soup that in the end tastes rich and complex and simple all at once. Garnish with your favorite toppings, and you’re good to go for meal prep or any easy week night dinner. Please enjoy!

RECIPE

INGREDIENTS
1 tablespoon avocado oil

1 medium white onion, chopped

1 medium red bell pepper, diced

1 medium green bell pepper, diced

3 carrots, diced

2 stalks celery, diced 

4 cloves garlic, minced

1 large sweet potato, diced 

1 can fire roasted diced tomatoes

1 can diced green hatch chiles

1 cup black beans

1 cup pinto beans 

1 cup hominy beans 

1 tbl cumin powder

1 tsp onion powder

2 tsp oregano

1 tbl chili powder 

Salt and pepper to taste

2 cups sliced mushrooms (or shredded chicken)

16 oz tomato sauce 

2 tbl tomato paste 

4 cups vegetable or chicken broth 

3 cups of water

1 tsp apple cider vinegar

METHOD:
In a heavy bottomed pot, heat 1 tablespoon of avocado oil on medium heat. Add in onion, bell peppers, carrot, and celery. Saute until translucent, then add in garlic, continue to saute for about 5 minutes and lower heat if needed. 

Then add in sweet potato, tomatoes, chiles, beans, and seasonings, stir well. 

Finally add in mushrooms, tomato sauce, broth, and water. Bring to a boil, then cover and reduce heat to low and simmer for about an hour, stirring occasionally, or until most of the water has reduced and the soup has slightly thickened. Finish by stirring in the apple cider vinegar and adjust seasoning if needed.

Serve with garnish of your choice

Garnish options:
dressed hearty greens, chopped cilantro, radish, avocado, cheese, crispy tortilla strips, sour cream, lime, flower petals, chili crisp
