Coconut white chocolate chip cookies
RECIPE
MAKES 24 COOKIES:
1 cup softened butter (or vegan butter, I like Myokos)
2 cups coconut sugar
2 eggs
2 tsp vanilla extract
1 tsp almond extract (this is essential! Don’t skip this step!)
1 tsp baking soda
2 tsp hot water
1 tsp salt
3 cups Einkhorn AP Flour (or GF 1:1 AP flour)
1 bag mini white chocolate chips
1 cup unsweetened coconut shreds (not flakes!)
Mix together butter and sugar until well combined
Then mix in eggs, vanilla, almond extract, and salt
Combine hot water and baking soda in a separate bowl to dissolve the powder, then combine with the butter egg and sugar mixture until well mixed
Then add flour, until combined, being mindful not to overwork
Fold in chocolate chips and coconut shreds
Pack dough into a ball, cover and refrigerate for 30 minutes
Preheat oven to 350 degrees
Scoop cookies onto a parchment lined baking sheet
Bake for 5 minutes then rotate the tray
Bake for another 5 minutes then remove from the oven
Let them rest on the same baking sheet until completely cool
